Well, our Four Q BBQ team met yesterday to finalize our plans for this coming weekend. Yes, we will be one short with BBQ Junkie who usually does chicken, taking off this event to take care of family and so the three of us (Survival Gourmet, Professor Salt and me)are going to pull together to prepare the chicken for this event.
I added just a little food porn. Choosing which prep to use during the competition was tough. We have our plan set with all of us combining our efforts.

hi there, what kinda marinade did ya use for the chicken?
henry
Henry, there were 6 different preps used so that we could test the best one to prepare for the competition. 1 marinade, one brine and 4 rubs. The marinade was simply Trader Joes Lemon, Ginger Sesame dressing, the brine was a mixture of brown sugar, kosher salt, Szechuan Magic seasoning rub, apple juice and apple cider vinegar. The rubs included a Szechuan Magic rub, simply salt and pepper, Magic Dust with Chris Lily White Sauce, Big Mista's rub and Italian Dressing and Big Mista #2 rub.
Can't post the exact recipes as they weren't all mine. I'll hold posting the ones I know until after the competition.
Best of luck. Aren't there any competitions up my way, Ventura? I'd love to come cheer you on.
Me too. Let me know when you have Los Angeles competitions. I want to cheer you on and eat.

There won't be any competitions in L.a. until the BBQn at the Autry Museum in April 07. We plan to compete again then. Luv to have you all comeby, cheer us on and sample a taste.
Many of the competitions they usually have in L.A. like the Rosebowl were cancelled in 2006
