Sweet Potato Pie

Often prepared for holidays or any special occassion.

INGREDIENTS

1 unbaked 9-inch deep-dish pie shell
2-3 eggs - slightly beaten
3/4 cup granulated sugar
2 1/4 cups Evaporated Milk
1/2 cup (1 stick) butter - melted
1 1/2 teaspoons ground cinnamon
3/4 teaspoon salt (optional)
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
2 3/4 cups cooked sweet potatoes

METHOD
Preheat oven to 425 degrees F

Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in sweet potatoes and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.

Bake for 15 minutes. Reduce temperature to 350 degrees F; bake for 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours.
Serve immediately or refrigerate. 8 servings per pie.

SPP is one of my favorite things to make. Though I don’t usually go with the deep dish. I might have to try this out and post the results on my blog. I once asked my wife’s grandmother if she could give me the secret to her delicious sweet potato pie recipe and she replied “lotta butta, lotta sugar.”

I will keep you posted.
